Cousin Sammy's Homemade Molasses Cookies

About 10 years ago, my cousin Sammy brought over some molasses cookies that she made to our annual family Christmas party. I loved how soft and crunchy and flavorful they were and was basically obsessed with them. Even after 10 years, I still never forgot about them and always wanted the recipe for them and finally got it recently. Ever since, I have been baked these multiple times and have gotten a lot of compliments, so I thought I would share them with you!

INGREDIENTS:

  • 3/4 cup of butter

  • 1 cup of sugar

  • 1/4 cup of lite molasses

  • 1 egg

  • 2 teaspoons of baking soda

  • 2 cups of flour

  • 1/2 teaspoon of cloves

  • 1/2 teaspoon of ginger

  • 1 teaspoon of cinnamon

  • 1/2 teaspoon of salt

  • 1/4 cup of sugar (you'll be using this later after rolling the dough into balls)

DIRECTIONS:

  1. Melt butter, add 1 cup of sugar, 1/4 cup of lite molasses, and 1 egg. Beat well.

  2. Add dry ingredients (baking soda, flour, cloves, ginger, cinnamon, salt). Mix well.

  3. Cover bowl and refrigerate for 15-30 minutes.

  4. Roll into balls then roll in the 1/4 cup of sugar.

  5. Bake at 375° for 8-10 minutes. Enjoy!
